Fig Balsamic Glazed Chicken Recipe

2 full chicken breasts split (should be 4 servings)

olive oil to coat

salt, pepper and granulated garlic to taste

1 cup crumbled Gorgonzola or Danish bleu cheese

1/2 cup Ashlynn’s Fig Francesca Balsamic glaze

1/4 cup toasted Almonds *optional

*Garnish with a fresh sprig of basil*

 

Cooking Instructions and Chefs Tips:

Rinse chicken under cold water, pat dry and coat in olive oil. Season with salt, pepper and granulated garlic. Grill the chicken breasts until they reach a temp of 155 degrees ( to prevent flare ups on grill keep a plastic cup of water by the grill, as olive oil tends to create many flare ups, this will allow your meat to cook evenly and reduce the amount of char).  Before removing from the grill place an equal amount of cheese each chicken breast, close the lid of the grill and allow cheese to melt until chicken breasts reach 165 degrees. Remove chicken from grill and drizzle 2 TBSP of fig balsamic glaze over each chicken breast (if you are going to serve sliced allow 5 minutes of rest time for the juice and sauce to adhere to meat and will be much easier to slice).
