Island Chicken with Honey Habanero is a dish you don’t want to miss! Way past the Southern Most Point is where this one is from!

We start with chicken thighs that have been marinated in jerk spices (walkers wood jerk is our favorite, next to our own blend) for 24 hours. Get your grill HOT and grill those thighs! (Thighs take a while longer to cook because of the bone so we like to “mark” the chicken over direct flame and then finish cooking them on aluminum foil.) Once you have flipped the chicken and are about 3/4 through the cooking process, baste each thigh with Ashlynn’s Honey Habanero Glaze. Baste at least twice before removing the chicken from the grill and then once more just before plating. Serve with a ramekin of sauce on the side too!
