Mediterranean Chicken with Olive TapenadeThis is a dish that any olive lover is sure to appreciate. Ashlynn’s Gourmet Kalamata Olive Tapenade is made with imported olive from Greece, Parmesan cheese, black olives, lemon juice and a blend of spices. Add some diced tomatoes, crumbled feta cheese, capers, finely diced red bell peppers and chopped artichoke hearts to the mix and you have a scrumptious topping for nearly anything. Cheese and cracker platters, grilled meats and seafood, a great addition to pasta and, who could forget, grilled pita, flat breads or french baguettes!

Here we used the mix for grilled chicken and added another level with a drizzle of Fig Francesca Balsamic Glaze at the end. Garnish with fresh oregano and served with a Greek inspired rice dish. We like to saute spinach and feta cheese in a seasoned olive oil and mix with Jasmine rice (cooked in vegetable or chicken broth instead of water) and the juice of 1/2 a lemon. Season with sea salt and fresh cracked pepper.

Enjoy on an outside patio with a glass of chardonnay!
